Tuna pasta Sauce

Last night I put together a dish I've been playing around with for some time; pasta (in this case Farafelle a.k.a. bow-tie) with a tuna tomato sauce.





Ingredients:
1 pkg sliced button mushrooms
1 7oz pkg tuna in water
4 small sweet peppers
Spices to taste (I used Herbs de Provence, oregano, parsley, basil and crushed red pepper)
Butter, for sauteing and taste.
Blended Scotch
1 tbsp crushed garlic (about 3-4 cloves)
1 28 oz. can crushed tomatoes
1 lb Farafelle pasta

Directions:

  1. Slice the peppers into about 1/2" x 1/4" pieces. Set aside.

  2. Start cooking pasta according to box directions and continue in parallel.

  3. In a large sauce pan, saute the mushrooms in butter. When almost done, add garlic for a quick saute.

  4. Add tuna to sauce pan and brown, about 4 minutes. Remove tuna from pan.

  5. Deglaze pan with a little Scotch (shouldn't need more than 1/4 cup). You're more than welcome to burn it off; the pyro in me loves doing that.

  6. Return tuna and mushrooms to pan. Add crushed tomatoes and peppers. Bring to a simmer and simmer for about 10 minutes. Add butter and spices to taste.

  7. When pasta is done, drain and mix with sauce.

  8. Enjoy.



Was pretty quick, and I think this was the best effort at this to date.

That looks yummy! I might try that...er...some weekend when my anti-fish husband is out of town. :)
